Menu Plan 7•11

Anyone else find it a little awkward to cook in someone else kitchen.  Or maybe live in someone elses house for that matter.  Im not going to lie.  I struggling a little bit even though I know its not permanent.  It wont be for much longer hopefully but still, I feel like Im taking up space and getting in the way.  Not to mention, I miss my cleared off counters, own pots and pans, my gas stove and my ice maker.  First world problems y'all.

Menu planning has been a little weird too.  Mostly because our ways of eating are polar opposites.  We eat mostly chicken and fish and a wide variety of fresh vegetables.  Not very much processed foods, carbs or oils.  Davids parents are red meat, rice, beans and tortillas for most meals.  So when I come in like ok we are having veggies onto of veggies and a side of fish, I kind of feel bad.  Not that they would ever complain, but ahhh, why is this so hard for me.

So this week I picked a few things that would be quick, easy and would make minimal mess.  And then I made on of the meals yesterday, so I might have to go back for more.  Heres what we are having the next few days.

Menu Plan 8•23

You guys.  Eating healthy is hard.  Ok not really hard but its hard when eating for you health means trying to listen to multiple doctors different restrictions.  The struggle is real.  Sigh.  I know I should be thankful for the health I have, and I am but damn if it sucks sometimes.  Its a challenge and something to overcome.  Thats what I keep telling myself anyways.  I got this!

Menu Plan 2•1•21

 I love that fresh start feeling when a new week, month and menu all start on the same day.  Just me?  Probably.  A Monday is a Monday I suppose.  I shouldn't say that because Im really trying not to hate Mondays.  I need to stop saying Monday.  Whatever.

So, new week, new menu.  Ive got ours all planned out and it should be a nice and easy week full of meals for us all.  Ive been trying to make at least one meatless meal that we can all eat together.  Last week I had a few bites to many of meat and my body is just kinda dragging this morning.  But clearly I was in need of a little more protein.  Trying to read my body and know what it needs is hard.  Le sigh.  So, lets see whats on this weeks menu.

Menu Plan 12•7•20

And just like that it is Monday again!  Two days of weekend go by much faster than any two week days.  Le sigh.  But I was ready for today no matter what kind of crazy it could bring.  It has been actually kinda of great and that includes both boys going to the doctor and 5 different needles, so... I got this!

True story, we were going to go grocery shopping yesterday, but then we got hungry.  And we all know you can NOT go to the store hungry.  And since we were out running errands we just grabbed a pizza on the way home and called it a day.  So now, we have to head to the store later today.  But the menu is planned at least, so Im not totally failing.  Lets take a look

 Another week, another menu.  This week caught me off guard and I needed a few things that I didn't trust the store shoppers to get for me so I had to actually go into the store!  The horror.  Actually, I had to go to three.  It was a long day for a person who never leaves the house.  But I found everything on my list plus some and didn't go over my budget.

The menu is a little all over the place.  Everyone has their own taste and this week no one was super sure about the recipes I sent them, so I just put all of it on the list and gave them a leftover day.  And declared that if there were no leftovers come Friday, David is in charge of feeding them.  Sounds fair right?

Menu Plan 10•26•20

 Happy Monday!  Today is feeling like a good day for a fresh start.  Or is that just the weather that Im feeling?  Its been a cool morning after some rain last night.  And tomorrow is supposed to be freezing.  Texas freezing, not like real freezing.  So in the 50.  And rainy.  So I better enjoy the energy I have now, because it will be hard to find it tomorrow.

Ish.  I don't have specific days and meals planned but I know what I have to make.  For the guys only.  Im still working on what I want to make for myself.  Last week I decided that making 2 or 3 meals and prepping them for the week was the best way to make sure I ate it all.  I hate throwing away food.  Even the 30 cent cilantro.  So in order to stop tossing so much at the end of the week, I decided to just make less.  And it seems to be working.  Here is what we have lined up for the guys this week.

Happy Monday Y'all!

I was up at the crack of dawn and out back with the puppies.  For a few minutes I debated on crawling back into bed after we came back in but then I remembered that I have a million things to do today.  I got laundry and dishes started.  Cleaned out the puppies pen and kennel.  Made my bed and got started on cleaning my bathroom.  Then Anthony scared the life out of me.  I couldn't hear him over my music and its not very often I see his face before noon!  Teenagers.

Speaking of teenagers.  My lord, do they ever stop eating?  I may or may not have bought 2 of everything this week just in hopes of filling the bottomless pit that is his appetite.  Im not a hundred percent it is going to last the whole week but a mom can hope.

Menu Plan 6•29•20

Happy Monday everyone!  I hope everyones week is starting off well and yall had a great weekend.  We did.  Now we are back home after we spent a few days visiting my younger sister.  Our original vacation plans went out the window.  No hotels, no beaches.  Just hanging out at aunties, playing video games and catching up.  We slept in and relaxed for days and it was amazing.  As we were driving back and were a few miles out of town, our phones started going off with covid warnings stating that the spread in our county has blown up over the last few days.  Not the welcome home we were hoping for.

We spent yesterday gathering our supplies for the craziness that we know is going to happen.  We got groceries before the shelves emptied.  Well, emptied more anyway.  We stopped by Sams Club to grab our usual bulk essentials.  Every register was open and the lines were almost to the back of the store.  Hey Sams Club Members... there is an app for that.  And you can pay online and walk out, around the lines.  Its amazing.

I did manage to get all the things I needed and a few extras to stock up the kitchen.  Thankfully I got my curbside order in while we were out of town and just had to roll by and pick it up.  I am all for anything to avoid the crowds in the store!  And my menu for this week is done.  Heres what made the cut this week!

The Easiest Artisan Bread Ever

There is something a little magical about warm fresh bread.  We try not to eat too much of it, but we also can't stay away.  It reminds me of growing up when dad would make his English Muffin Bread.  That's another favorite of ours.  I don't remember if I have shared that recipe here or not.  I should.  I should make a few loaves too, so I can take pictures and such.  All in the name of the blog! Anyone else drool over bread pictures?

During our last trip out to visit my brothers and sisters, we were treated to a little delight.  OK, we treated ourselves to more than just a little of it.  One night my sister made some beef stew and was talking about how good the bread she makes with it is.  I had no idea! We ate so much that when we went bowling after dinner, I had to unbutton my jeans while I waited for my turn.  Since then, its either bread or beef stew.  Guess which one wins in my book?

Menu Monday: 4•1•19

There is something extra exciting about a Monday that kicks off a new month!  And by exciting, I  mean I should be excited about it but for the love of all things, I am exhausted this morning and I am extra excited about maybe even getting a nap in at some point this morning.


But first I need to get my week planned out because I have been winging life lately and it's not working so great at the moment.  When I don't have a clear plan laid out I tend to fall off and under the bus.  I forget my medication, I get sucked into binge watching Netflix and run late getting dinner started.  It's the worst.  So I am kicking off the month on the right foot.  Exhaustion be damned, I have things to do!  First up is this weeks menu.  Here is what we will be cooking up...

Its been a little quiet around here.  But today is a new day and a new week and I am ready for it.  I think.  I mean I know.  I know I am ready for it.  OK!  Let's go.

Menu Plan

First up for the week, grocery shopping is done and my menu is planned.  My thought going into the week was "please God no more chicken!"  I don't usually get tired of bird, and I don't usually eat much of what I cook for the guys, but this month I have and I'm all poultry-d out. There is still a chicken dish in there.  A new to us recipe.  And I may still use turkey in the spaghetti.  Maybe.  So here is this weeks menu.

Cranberry and Cinnamon Goat Cheese Tartlets

The holidays are here!  And we are finally feeling the spirit around here! There has been more cold days than hot it seems.  Which is a little different for us here in South Texas.  But we are embracing it and determined to enjoy it!

For us the holidays are special because they bring us all together.  Family.  Friends.  Neighbors.  This is the time of year to slow down and take time to be thankful for things that we might not have realized are blessings to us.  And we can't forget about all the food.  Am I right.


Fall foods are the best.  Thanksgiving is actually my favorite holiday of all.  We are a little traditional around here.  We do the turkey with all the fixings.  Stuffing, mashed potatoes, green bean casserole, creamed corn, rolls and don't forget the cranberry sauce.  I love cranberries.  Spring and summer its all about the dried cranberries, but when fall hits, I love seeing the little red berries everywhere.

Menu Plan Monday { July 23rd }

I'm up a little early for Summer but today is a long day and so here I am.  I am headed to the Transplant Clinic for scans and labs.  Then I have some time to come home and let the dogs out and get dinner started before heading to 2 more appointments for hematology.  I could really use a coffee right about now but I have to fast for my CT! Boo.


This weeks menu is not as light and Wednesdays dinner takes a little extra time, but its all delicious. Here's what we are cooking up this week.

Menu Plan { July 16th }

I got a late start this morning.  The boys are out of town visiting family and I was pretty sure today was Sunday.  Yeah, it's not!  It Monday and I have so much to get done today.  Things are about to get a little interesting around here.  We are expecting company tomorrow!  But for today I'm keeping it short and sweet.


Confession time!  I just now finished getting my groceries ordered.  I know I might have said that I was done with this curbside business, but I tried going into the store and wanted to run someone over with my cart less than 5 minutes later.  Plus, it's just SO much easier to pull up to the store, have them load my groceries and then leave.  No crowded isles, no last minute additions, no people coughing on me (yes that happened) and I'm always under budget!  I really do love HEB but I can't stand to go into the actual store.  This works! Now about that menu...

Menu Plan Monday { February 5th }

Happy Monday everyone.  

I'm not sure where the weekend went, but its gone and now we are waking up and starting another week.  Its early and I'm not quite awake yet, but I am determined to make it a good week.  As much as I am stressing over this weeks drs appointment, I am 99% sure its just going to be an initial visit.  Just the get to know you kind of stuff. But its a new doctor.  I could really do without another one of those.  It is what it is though.  Better to know where we stand.  And February is American Heart Health Month.

Today I am focusing on my menu.  I need to get everything prepped for the week.  I should have done it yesterday, but between doing taxes, going out to dinner and some football game, I ran out of time.  No worries, today works too.  At least its planned out.

So we have 3 new recipes this week.  I know.  What am I thinking?  I have asked myself that a few times just this morning.  But nothing sounds good, and the guys didn't have any suggestions other than the lumpia (that I was secretly craving last week) so I just scrolled through Pinterest and picked something where it stopped.  Menu Roulette?  Whatever, it works.

Second Breakfast

I joked with David earlier about how other people have breakfast for dinner and they live.  My guys usually require a more filling meal, but figured if I'm shaking things up this week why not give it a try.  So fingers crossed, they aren't channeling their inner hobbits and thinking it's just dinner and that there will be supper later.  Hobbits are cute, but they never stop eating!  I'm a nerd.  Don't judge!

When Life gives you Lemons. Make Lemon bars!

Over the holidays I was pet sitting for a neighbor.  Just about every Christmas for the last few years I have had extra pets in my house but this time, I just had to take a short walk across the street.  It worked out perfectly.  When they got back I confessed to snagging a lemon from her tree.  I knew she wouldn't mind.  Later, they brought me over 2 shopping bags full of lemons.  And these aren't your average size lemons.  They are Texas lemons.  Twice the size of the ones I get at the store! 

So as a thank you for the lemons, I made her a batch of lemon bars!  I don't know where this recipe came from because it was typed out with a bunch of other recipes my dad passed along over the years.  But its one of my favorites.  They hold together so well and are sweet but tart.  And apparently irresistible.  I walked away for a minute and there was magically a bite missing from my bar.  But who ever stole a bit was sure to shake more powered sugar over it in hopes that I wouldn't notice.  Sigh.


Ingredients

2 c.       All Purpose Flour
1/2 c.   Powdered Sugar
1 c.       Unsalted Butter Softened
4           Eggs
3T.        All Purpose Flour
2 c.       Sugar
1/2 c.    Fresh Squeezed Lemon Juice
             Just a pinch of salt

Directions

Pre Heat Oven to 350 degrees

In a large bowl, mix the 2 cups of flour with the powdered sugar and cut in the butter with a pastry blender to crumb size.  

Grease a 9x13 pan and pat the crust down evenly.  

Bake for 25 minutes.

In a medium bowl, whisk eggs, sugar, 3T of flour, lemon juice and salt till smooth.

Take the crust out of the oven and pour the lemon mixture over it.  

Bake for 20 to 25 more minutes.  

Let it cool before you cut it.  

Serve dusted with more powdered sugar.

It's a good thing I love all things lemon.  So what exactly did I do with all the lemons? Well

I froze half of them.  I sliced and halved them and laid them out of a piece of parchment on a cookie rack in the freezer for a few hours.  Then I shook them loose and packed them up in bags.  I throw them in water or tea.  Adds a little flavor and keeps you cold drinks cold.  Plus cool down my tea with out watering it down!

Lemon Pepper Turkey brought smiles to the table last week.  We love this dish.  Its easy, inexpensive and delicious.


This Salmon Recipe was a big hit too.  It was even better with lemon juice squeezed over the top of it.

I have also made a few batches of homemade lemonade.

And I still have lemons left.  I have no idea what I am going to do with them yet but I have created a Board on Pinterest just for all things Lemon.  I think maybe I will try the Homemade Garbage Disposal Lemon Bombs I pinned.  And maybe the lemon crumb muffins!  YES! 

What I really need is my own lemon tree.  I guess I will have to work on that once spring comes around.  Which is welcome to come any day now.  I think I am officially over the cold.

Menu Plan Monday: October 16th

Another week, another menu!
Last weeks favorite dinner: Buffalo Chicken Tenders
I'm kinda digging the whole shopping on Saturdays instead of waiting will the end of Sundays and rushing. David is probably reading this and saying "I told you so!" The boys spent the Friday night at Grandmas, so we had most of Saturday to ourselves. Slept in, took a trip to the zoo so I could get more snake pictures for a post next week, stopped by the Thai Market and then to get groceries, all with out any complaints.

Sunday morning was spent lounging around. Eventually we got out and took a trip to the library and then to the park. It takes so much to wear these boys down. They just never stop. We got to see Aunty Booger and her dog Panda too, so that was fun. Sunday Fundays!

I didn't get to making the Curry Meatballs last week.  I couldn't find the right curry paste in the store. Then I remembered the new Thai Market and of course we found some there this weekend. The Mushrooms and the other Meatballs on Friday will help me knock out my goal to try 4 new recipes this month!  Boom.  And yes, we are having meatballs twice this week. Mostly because the boys love meatballs, Im willing to be it's more so for their name than anything else. Boys. Somedays I can't even with them! Other days I can't help but laugh with them. As long as they eat right?!

We eat a lot of bird y'all. But I don't eat red meat anymore other than a burger here and there. And the last time I was going to buy some steak for tacos, David about had a heart attack at the price of it.  He's used to chicken prices HAHA! And we like pork chops, but the boys favorite way to have it... fried. Mmmmm. But not much gets fried around here anymore, so pork isn't something we buy often either. Just chicken and turkey. Almost always chicken and turkey. Does it get old? Yes, but nothing a variety in flavor cant fix.

Menu Plan: October 9th

I wanted to start today's post out with some motivation.  Some amazing quote or a fun little meme that would remind you to get up and make the most of the day. Something that would get me out of bed and ready to take on the day.  Yeah, about that. I'm kinda winging it today.  Seriously, most days I am running in auto pilot and doing just enough to get through the day with out anyone noticing how much I am struggling. Oprah gets me though.


Grocery shopping was done on Saturday again. Its really nice to get it over with. Plus, they still have the bread the boys like and the veggies aren't completely picked through. They had everything I needed except corn on the cob so I grabbed a package of the frozen ones and called it good. And it looks like the days of having the weekends off is over.  But leftover nights on the weekend are cool too, because lets be honest, there are much better things to do on the weekend besides standing in front of a stove. Sunday included, running errands and paying bills, mowing the backyard, the gym, the pharmacy, home to watch the Cowboys lose, then out to Best Buy to pick up my new headphones.  After that I think we were both wiped out. The boys of course stayed a second night at Grandmas. 

But we were able to get everything we wanted to get done, plus more. Lets hope that Monday is good to us. If anything, at least my menu is done and planned. 


This Chicken Parmesan Casserole is super easy. Easy is a winner in my book. You just layer a few things in a pan and bake it. Voila! We pair it with a nice salad and call dinner done. 

Last week a friend shared a recipe she had made with her Instant Pot and I had said that I was so bummed that I didn't have one because holy yum, check out this this Pollo Guisado con Maiz. Im super excited to try this one and thankful it can be made in the stove! 

How fitting that we are having fish on a swim day! Oh man I crack myself up. My boys love fish, but this way is their favorite. The original recipe is called Mamas Supper Club Tilapia, but Dad told me this crazy story about tilapia and now I switch Swai out of Tilapia. I'm sure they will ask for white rice with it. Its a little heavy on the sodium so, I only eat a little. If I could, I would eat half the pan. 

Anthony picked these Yellow Curry Meatballs based on the photo he saw when he was watching me scroll through Pinterest. He said for starters, its kinda colorful and plus, he can't remember what curry tastes like, so that was his contribution to the menu this week. I wonder if he will help me cook them too?!

And because 2 new recipes were not enough, I found Buffalo Chicken Tenders in the Paleo Cookbook I checked out on Friday. We don't eat strictly paleo. Or strictly anything for that matter.

Someone recently messaged me when one weeks menu seemed a little more heavy that usual. She, like me is living with liver disease and asked me how I managed to eat what we were eating and not hurt. Its no big secret. Most nights, I don't eat dinner.  Or if I do, its only a few bites while I'm fixing every ones plates. These days I don't sit down for dinners unless its just for the conversation. Eating makes me really uncomfortable so I am usually done eating anything filling by the time the boys get out of school. If I made meals that were based on what I can eat, David and the boys would miss out on way to much. So I cook for them, eat what I can and stick to smaller meals and my shakes. And yes, I know, I don't look like someone who hardly eats, but thanks to yet another illness that fights me on the whole fat loss battle front.

How do you do dinner?  Family dinner at the table? In the living room or where ever? 


Eating anywhere but the dining room table is a rare thing in this house. Unless we are watching a movie, food stays in the kitchen or dining room. That's how my family did it growing up. As dysfunctional as we were, when Dad called us to dinner we all came quickly, prayed and ate together. The first time I ate at Davids house, we made our plates and went to his bed room. I couldn't even finish my dinner I felt so weird eating anywhere other than a table.

Menu Plan: August 7th

I'm not sure if it's because summer is coming to an end, the boys are growing or there are people living in the closets that come out to eat when I'm not looking, but we had next to zero leftovers this week. Usually there is enough for a clean out the fridge day. Come Friday, we were out of everything, even cheese! So this week I'm cooking all 5 days. And will be sure to grab some extra fruit and veggies to stash in the snack drawer.


We have three new recipes again this week. 

The Turkey and Green Bean Stir Fry looks simple enough. I've never done a stir fry with ground meat, so it will be interesting but it's spicy so the boys should be happy. They have been killing me with the spice lately always telling me to turn up the heat. 

There is the Honey Sriracha Chicken that looks amazing. Another spicy dish... I have tried a few other things from Rasa Malaysia and loved them so far. This one shouldn't disappoint either.

Somethings just sound better in another language. I originally wrote Mexican Stew, as it is titled in the recipe, but then I saw that it in Spanish it is called Guisado de Res. Just like the Arroz con Pollos, I used to call it just chicken and rice. Its funny because people usually think I'm Spanish and I cant even roll my Rs enough to say Arroz. It just looks better written that way! 

So, tell me how you feel about spicy food? I used to be such a chicken and refuse to eat anything even a tad spicy, but the more the boys ask for it, the more I make it and like it. I'm not about to eat a pepper straight up, but I did put some hot pico on my barbacoa this morning! Watch out!

Beef and Broccoli. Dinner tonight. Lunch tomorrow.

My favorite thing about packing lunches for all 3 of my guys is that I know exactly what they are eating.  I know its balanced and something they like.  My least favorite thing is all the dirty lunch containers.  I take that back. The worst part is when David one of them forgets to empty their lunchboxes on Friday and you get a not so pleasant surprise come Monday morning.  

Then the other day while I was wandering up the food storage aisle at Walmart, I found these little life changers on the shelves.


I mean really, this is the answer to my lunch packing lovers heart ache! Microwave safe. Not only are they disposable, but made of plant fibers.  This makes them a great alternative to those dingy lunch containers and when you are done eating, you can just toss it out. No need to clean anything. And there are two sizes.  32oz and 24oz.  Perfect for lunches.


I have to admit, that I am an over feeder.  Most days, David doesn't finish whatever it is I sent with him. So at first, I was worried I wasn't going to be able to stuff enough food in there.  The 32oz is the perfect serving size.  I had to remind David to take the lid off when he reheated it at work.  It gets hot but the lid actually acts as a tray to set it on while your food cools down a little bit.

Tuesday night David came home and guess what?  No dirty dishes.  A girl could get used to this!  


Last week, David sent me a text that said " I was told today that I am lucky to have such a great wife. I have to say, I agree!"  Turns out some of the ladies from work had told him that.  All because I pack him good lunches?  It's usually just leftovers. The boys hear it too.  I may or may not occasionally pack lunch for other kids.  I know Breakfast is the most important meal of the day, but lunch is the one meal we don't have together so you had better believe Im going to make sure it is a good one.

The possibilities are endless. You can find many more HERE. But I knew my Beef and Broccoli would be the first recipe we tried in the new Reynolds™ Disposable Heat & Eat Containers. This is Davids go to food when we eat out, but here in Texas we have yet to find a restaurant that makes the dish to his standards. And it seems there is a reason here in the states they call it Broccoli Beef...because you get all broccoli and only a few slices of beef.  



Ingredients

2T    Cornstarch
1t     Sugar
1t     Baking Soda
1T    Soy Sauce (low sodium)
1T    Vegetable Oil

2lbs  Beef (sliced thin)
         Broccoli (cut into bite size pieces)

1C    Soy Sauce (low sodium)
2T     Brown Sugar
1T     Oyster Sauce
5       Garlic Cloves (minced)

Directions

1.  In a large bowl, whisk together the first 5 ingredients.
2.  Add the beef to the bowl and toss, making sure all of the beef is coated.
3.  Cover and put the beef mix in the fridge to marinate for at least one hour.
4.  In a small bowl, mix together the last 4 ingredients and set aside.
5.  Heat 2T of oil on medium/high heat and add in the broccoli for a few minutes.  Remove from pan.
6.  Reduce the heat to medium.
7.  Add 1T of oil to the pan.  When the oil is hot, add in the beef.
8.  Add half of the sauce, being sure to scrape the bottom of the pan so nothing sticks.
9.  When the meat is no longer pink, add in the broccoli and remaining sauce. Stir well.
