Whats up Weekend { March 30th }

Its been a quiet week around here.  The blog I mean.  Life has been anything but quiet.  Quite a storm blew through this week for sure.  And man am I ever happy its Friday!  The best part is that David is home today too.  The boys didn't feel like hanging out with us cool kids so we are off going to see what trouble we can find while the boys hang out at Grandmas.

In typical Friday fashion, I'm going to share a few moments that made my week before we take off this morning.  What made you happy this week.  Here is what made my list.


Blooming flowers.  I really need to get these in the ground.  Ponchos big butt knocked one of them off the table and I'm hoping the damage isn't too bad.

Handpicked family.  When I told my friend we were going down to one car, she and her hubby quickly stepped in and have been taking Alex to school for me in the mornings.  I had a feeling they would have pulled over if they saw us walking in the morning.

Good food.  We had chicken breast this week and there was not one complaint about dried meat.  Enough said!

Thunderstorms.  When the storms get loud it drowns out all the noise in my head.  I know most people get anxiety with storms but I am the complete opposite.

Girl time.  We had a full house the other day.  3 boys and 4 girls.  Big kids were doing homework and the littles were running around and playing in the tent.  I didn't get the big family that I dreamed so even though it gets loud and crazy, I love it.


Snuggle time.  Chico the Chihuahua is almost 17 years old as much as it hurts my heart to admit it, he is on the downward slope.  Mostly these days he prefers to snuggle up to his big little brother.  And I'm thankful that Poncho is willing to share his bed with him.

Talking Story. I think that's just an island phase but I love just talking with David. I've been told its pretty odd that we talk so much but I can tell the man anything.  Laughing till I cry and crying till I laugh.  His serious self never gets tired of my silliness.

Writing.  I know.  None of its made its way here.  Well, a lot of it is saved in my drafts.  Lots of brain dumping and me thinking things out loud and "on paper."  Who knows, maybe I will share some of it later. But I had forgotten how good it feels to just write it all out.

The Red Road.  I've been laid up on the couch more than Id like to admit this week.  But I found this show on Netflix.  Jason Mamoa always makes the day better!


My Fitbit.  Yes, I broke another one.  But after a day without it, I realized just how much I love it.  Thankfully David gets insurance on everything so I get a new one this weekend.  I also realized I have become a tad obsessed with watching my heart rate and not being able to kinda freaks me out.

So there wasn't anything super amazing this week.  Just little things in life that made me smile or reminders of how blessed we are.  Id love to hear what made you happy this week.


We are planning to have a fun weekend.  Today it's just David and I.  We will grab the boys on the way home for one last Friday fish dinner and then S'mores night.  After all that rain the backyard has blown up and so there will be quite a bit of yard work to get done too.  I am insisting on at least one park run.  The boys have been getting a little too comfortable in front of the TV so its time to get some fresh air and get a little dirty!  What are you up to this weekend?

Menu Plan Monday { March 26th }

You know what I love?  When the weekend starts to look like a total bust but then redeems itself at the very last minute.  Yes, I love it when that happens.


Saturday we were running around a little crazy.  We woke up later than planned and had to rush to an appointment.  Afterward, we came home and I crashed.  I don't know if it was all the walking I did last week or what, but by that afternoon I was done.  Next thing I know Alex is calling me and asking if we are ever going to get him from Grandmas house.  He had been texting me for 3 hours.  David let me sleep and ordered pizza for him and the boys, only to find out it wouldn't be ready for 2 hours.  David picked up Alex and the pizza got here in half the time, so we called it a win.

Sunday I was up tossing and turning till 4 am.  We planned on going to the Zoo to try out the new camera but turns out everyone had the same idea.  Both parking lots were full, so we tried to find a spot at the park.  Every parking stop and picnic spot was taken.  So we decided to try a new to us burger place for lunch.  No parking.  Went to another restaurant and the line was out the door.  All of San Antonio was out yesterday and it was awesome.  I will admit was was hungry and didn't get to see my snakes so I was a little grumpy but still, everyone was out enjoying all the city has to offer and that's always good!

We ended up coming home and doing some things around the house before going to get some groceries.  I know what you are thinking.  When does the weekend redeem itself, Kim?  After getting all my groceries put away, I threw together a quick dinner and we started winding down for the night.  Once everyone was asleep I was able to get lunches packed and then soak up to my nose is a hot bath before crawling into bed.


Lunches were packed.  Snacks were sorted out.  The kitchen was clean and so was I!  Its the little things that make me happy.  Going to bed knowing I was prepared for the morning, is a win in my book!  Plus, my menu is done!

We are going back to one leftover day a week.  I hate throwing food out and there has been far too much of that going on lately.  Usually, I would do it on Wednesday so we can clean out the fridge before trash day but with Lent, I find it easier to eat all the meat before Friday.  This way we don't have to see meat everytime we open the fridge.  Removing the temptation!

What's up Weekend { March 23rd }

Sometimes no matter how hard we plan things, it all goes sideways.  That was this week for us.  We were running around every day this week as soon as David got home.  That never happens.  We usually keep all the excitement under wraps until the weekend.  But today, when David pulled up and I was across the street sitting in the neighbor's driveway (don't worry, she was there too), I didn't even think about moving from my spot.  Tonight this girl is staying in.  I might even go to bed before midnight!  Crazy I know.  But that sums up my week.  I am exhausted.

Even though the week was full of crazy, I have to admit, it was a great week.  And since its Friday and we all know that Fridays around here are for sharing happiness, here are a few things that made my week!


Bluebonnets.  When Spring hits San Antonio, these little beauties start popping up all over the place.  Mostly along the highway.  At the hospital, they have a whole field of them away from all the traffic!

A husband who is the yin to my yang.  We are complete opposites in life.  But we balance each other out perfectly and I love it!

Sunshine.  Summer is my favorite, but I'll take Spring over winter anytime.  Mostly because the sun comes out again.  I need sunshine in my life.

Friendly hospital staff.  I always look forward to seeing my Hematologist.  We spend most of the time laughing.  This week the lab technician was super nice too.  Its the little things!

Naps in the hammock.  This kind of goes along with the sunshine.  The hammock, sunshine and a new book = life!


Discovering a new park.  We took the back roads and found a park along the way.  One that I have been meaning to check out but never got around to it.  Bob Ross was right, "There are no mistakes, only happy accidents!"  Smart guy!

Hitting my Fitbit goals.  Its been so long since I have moved this much but I did it.  And it felt good too.  I just might get up the courage to go back to the gym!


Steak night.  It doesn't happen often around here.  I think it has been a few years since the last time.  I love me some steak buy my poor liver just can't process it.  I've never made steaks on the stove.

Saying yes to an invitation to a blogger night at a new restaurant.  I am never able to make these events and if I can I usually chicken out.  I got a chance to chat with another local blogger and I'm feeling much more confident in myself.  I miss writing.  I know things have gotten a little predictable around here.  Change is coming!

I know there is more but I'm exhausted I can't even think straight anymore.  One boy has a friend over and the other is talking to a girl.  You guys, I can't make this stuff up.  We have had to have multiple talks about girls this week.  No wonder my brain is drained.  Sigh...


What is everyone doing this weekend?  We have an appointment tomorrow but other than that we are winging it.  I'm hoping we can make it back to that new park we found or any park will do.  I probably should stay home and manage the disaster that is my house at the moment though.  Boring!  We will see I guess.  Have an amazing weekend everyone!

TRIO Grand Opening brings Modern Mediterranean to San Antonio's West Side

Healthy Mediterranean options are coming to San Antonio’s west side with the grand opening of TRIO Modern Mediterranean’s second location at Westover Market near the intersection of Hwy 151 and Potranco Rd., Saturday, March 24, 2018!

San Antonio West Side

Doors will open at noon, but we recommend snagging your place in line early because TRIO will be giving away free food and swag! The first ten people in line when the doors open will receive free food from TRIO for six months, the next thirty people in line when doors open will receive various TRIO swag, including thermos bottles, t-shirts, and sunglasses. To make the deal sweeter, everyone who stops in from noon to 2 P.M. will receive a free meal! 

The event will kick off with a ribbon cutting ceremony. The TRIO ribbon cutting ceremony will host District 6 Councilman Greg Brockhouse and the West San Antonio Chamber of Commerce. Magic 105.3 will also be broadcasting on location as patrons are lining up before the doors officially open. 

During the TRIO grand opening local pet rescue group, Charming Pet Rescue will be bringing adoptable pets for guests to interact with in the hopes of finding these animals their forever homes. The Charming Pet Rescue adoptions will take place from noon to 5 P.M. 

Free food will end at 2 P.M., but the festivities won't end there! There will be a live DJ on location to provide music during the grand opening festivities. At 2 P.M., guests age 21 and over will be able to participate in a TRIO beer tasting event. Beer tastings will be available from 2 P.M. to 4 P.M.

Menu Plan Monday { March 18th }

Back to the grind we go!  Spring Break is over.  It wasn't a total loss but we would be okay with a do-over.  Anyone know how to make that happen?  That would be great!  If not, no worries.  To be honest I think we are all itching to get back to a routine anyway.  Plus we have a 3 day weekend coming up in a few weeks so at least we have something to look forward to!

Like I said, Spring Break wasn't all that bad.  We managed to do a lot of relaxing.  Mornings were spent on the patio with some coffee while the boys slept in.  Nights were spent hanging out with friends and family, playing games and catching up on some tv.  We managed to do or start all the projects we had planned too, so that's another win.


And now we are back to reality.  This weeks menu is full of deliciousness.  And yes, that says steak.  I have really been wanting some red meat so I am going to split a steak with Alex.  He is picky about beef and I can't have a whole steak so it works.

5 ways to make eating better easier


You guys!  Its March!  We are three months into the new year and right about now many of us, myself included are starting to feel the strain of our resolutions and goals.  This year, I did not set specific resolutions but do aspire to clean up my diet, eat better, more balanced meals at home.  In January I was pumped and it was fun.  February, things started getting a little lax but its time to kick back into gear.  Here is how I plan on doing just that!



PLAN 
Through out the week I am collect dinner ideas for the following week.  Come across a recipe on Pinterest you think you might want to make? All those tasty videos on Facebook you want to make, save them too.  They all go into a bookmark folder named Dinners for next week.  I also have another folder for the current week.  One of my favorite things to do is check out a cook book from the library!  Collecting recipes so that I always have a good collection to pick and choose from.  Planning your menu out is a great way to make better choices.  Its rewarding to know you have a plan and can pass up the drive through on the way home.  I see you fast food, and I'm not stopping!



SHOP 
Raising to growing boys isn't easy.  The amount of food they can eat is sometimes mind blowing.  David and I became Sam's Club Members before we were out of our teens.  Even then, I loved that I could find everything I need and enough of it to last us well into a second week.  Now days, with 2 growing boys a week is about all I can ask for.  They eat so much! Being able to buy Tyson® Frozen Chicken Breasts in bigger bags is great because there are a hundred and one ways to prepare them.  And I can get 2 or 3 meals out of one bag. Not only does that help us make better choices but it saves me money too!



PREP
The proof is is the prep.  I usually take a few hours on Sunday and prep as much as I can for the week.  Many vegetables can be washed and cut ahead of time.and stored in the fridge or freezer.  This will not only save you time while you are making dinner, cleaning up is a breeze too.  When I prep Davids lunches for the week, he always appreciates the added protein from the Tyson Grilled and Ready® Chicken. And with The Its easier to skip the drive through when you know you have a better option waiting for you!  Get some Tyson® Frozen Chicken Breasts marinating for the next day.  One less thing to worry about during the week!



PICK
We all know the key to eating better is balance right.  Making better eating decisions does not mean you will have to spend more money or more time in the kitchen cooking each and every meal from scratch.  Balance is key.  Learn to pick your battles.  If you know its going to be a crazy morning, go with an easy breakfast like Jimmy Dean Delights®.  If you don't have the chance to prep lunches, ahead of time, do it at the end of the day and save yourself some valuable time in the morning.  This way you still have time to enjoy that coffee. Don't be so hard on yourself, instead pick your battles and give yourself a break!



CLEAN 
I'm not talking about clean eating this time.  I'm talking about cleaning up after you spent the day prepping for the week ahead.  Cleaning as you are making dinner so you don't turn around and wonder how the sing got so full of dirty dishes.  Sometimes, I want nothing more than to leave the dishes till tomorrow.  Want to know whats better than waking up in the morning, knowing your meals are prepped?  Your kitchen being clean too!  Plus now you can't use the "there are no clean dishes" excuse and choose to eat out instead!  I know I'm not the only one who has ever used that one!


The truth is, when it comes to making better choices, you have to do whats best for you.  And I am able to do just that by shopping at Sams club.  It doesn't have to be super fancy or perfect.  As a stay at home mom who is also chronically ill, some days I feel like I just don't have the time or the energy to even make dinner.  But opening up the fridge and seeing that I already have half of the work done, keeps me from insisting David just grab something on his way home.

Whats up Weekend { March 16th }

Another Friday is here.  And just like that Spring Break 2018 is coming to a close.  This year things were different than the past few years.  David was working, so the boys and I mostly stayed home.  Usually, we go on a mini vaca but this year that is going to have to wait.

We did get out of the house a few times and this morning we are about to go do one of their most favorite things ever.  Something that they usually don't get to do now that they are both in school.  Guess where we are going?!  We are going to the hospital.  And after my appointment, we are going to the cafeteria.  I kid you not, they were so excited that I had an appointment during Spring Break for that very reason.  I'm happy that they are so happy about it.  I'm not sure why they are so happy about it but I am rolling with it.

Spring Break Book Haul

If the boys could have it there way, they would be hooked up to electronics the whole week.  The would occasionally pause to stuff some food in their mouth or take the fastest bathroom break known to man, but they could and would play games all. day.  long!  But thankfully I am able to pull them over from the dark side for a few hours to do something to break up some of that screen time.

READING!

In this house, reading is a requirement.  One of course that I don't really have to force on them because they do love reading.  But sometimes they are a little invested in a game and don't want to quit just yet, so that is why I say required.  Yes, they do play video games.  Maybe more than some kids.  But during the school week, they are not allowed to play so when they are on break they enjoy it.


Go figure, I chose a cookbook as one of mine.  I haven't looked through it yet, but fingers crossed there are some good recipes in there.  Shes still here was on the new books shelf.  And Anthony gave me We are all Shipwrecks and said: "this sounds like something you would read!"  I really hope he was going by the cover and he didn't read the flap.  Heres what good reads has to say about these two!

Anthony found some super interesting books.  He isn't as excited about reading as Alex but like me, he loves to read at bedtime.  And when he gets into a book he can't stop reading.  He was hoping to find a certain book but the library doesn't have it in stock, so we put in our first request for a book.  Fingers crossed they order it!
SOAR is about a boy who is a huge baseball fan and after heart surgery, he is told he can no longer play!

SLIDER is about a kid who enters an eating contest to win back the money he accidentally spent on his mom's credit card.


Alex chose a cookbook as well.  He is my kid and just loves cookbooks.  He is a little more methodical in choosing books though.  He always insists on looking them up on the computer, writing down and then running his finger along the shelves until he finds them.  Its hillarious to watch.  The way his face scrunches up and he whispers authors as he passes them.  Part of me thinks he just likes being able to use a computer.  I tell the boys to get a fun book and then to see if they can find a book they can learn something from.  Alex always cracks me up with his finds.


They didn't have the Minecraft book he wanted so he went with Captain Underpants instead.  Underpants and a Turbo Toilet....yeah, that sounds like something he will love.  Then he found the cookbook.  I can't wait to see what he chooses to make out of this.  Sugar will be flowing.  Last but not least, he found a filmmaking book that he says will help him with his Youtube videos.  No, he doesn't have an actual channel yet, but he plans to! He makes videos almost daily to practice.  Practice makes perfect right!

We had planned on actually working out and going for a swim while we were at the Y, but didn't make it past the library.  It happens.  We made it out of the house, so let's just call it good!

What are you reading or what have you read lately?  I have a long list of books on my to-read shelf but I always forget to check it when I'm at the library.  

All this talking about books has me itching to crack open my books.  I just set up the hammock in the yard too.  If anyone needs me, you know where to find me.

Menu Plan Monday { March 12th }

I am so ready for Spring Break that my menu is done early!  No joke!  I got grocery shopping done a day earlier than usual and was ready to go.  When the boys are home all day, food has a way of disappearing.  Not that they are overeating but they tend to graze.  So I had to make sure that I was stocked up on fruits and veggies.  I did get them some chewy bars for on the go snacks and popcorn too.  Because we are bound to have at least two movie nights.  And a bag of pretzels because I have a pretzel monster

We have gotten in the habit of having salads at almost every dinner.  If not I will cook up whatever veggies I have.  But our dinners are mostly, meats and veggies.  The boys did ask for some noodles with the Mozzarella Chicken.

The Roast and the wraps are from the personalized nutrition plan that I talked about last week.  But the other three are regulars around here.  We didn't have tacos last Tuesday and the boys looked at me like I had grown another head, so, Tacos it is.  We don't ever have anything else when we have tacos.  Do you have a side dish with tacos?  I suppose beans would work but no one ever asks for them.

Whats up Weekend { March 9th }

This Friday seemed like it took forever to get here.  That might have something to do with the fact that I woke up on Tuesday with a smile and for half of the day, I thought it was Friday.  After that, the days just dragged on.

But now that its really Friday, its time to take a look back at the week and share the things that made me happy.  As well as things that reminded me to be grateful and thankful for.  Lets face it, some weeks are better than others, but if you look hard enough, there are always things to be happy about.

This week for breakfast I made up a batch of Egg White Veggies cups.  So heres the thing, I've always been a more of a whole egg kinda girl.  I was cool with the veggies, but I wasn't sure I could give up the yolk.  It only took me a few minutes to get everything mixed up and in the oven and before I knew it, I was taking the cutest little egg muffins out of the oven.  And even more surprising was that I really enjoyed them.

While breakfast was baking up, I was able to get my meatballs prepped for dinner so that all I would have to do is roll them out and pop them in the oven when I got home from picking the little kids up from school.  I love that all the recipes are filled with healthier options and fresh veggies.  Coconut aminos is a regular around here but this was my first time using almond flour.  The meatballs came out perfectly.

Then after dinner, I went ahead and mixed up the chicken for the following day so it could marinate overnight.  Tuesday all I had to do was turn on the stove and throw together a salad.  Dinner was done in under 30 minutes.

Menu Plan Monday { March 5th }

The countdown is on!  One more week until school is out for Spring Break!  And there is a chance that I am more excited than the boys about that.  Hello late nights and pool days!  I am a little bummed that David isn't able to have the week off with us like he usually does, but he will be home earlier now so there's that!  

But first, we have to make it through this week.  And that should be fun.  Its an easy week at school for the boys.  Davids new schedule will take some getting used to.  And on Wednesday I go back to the cardiologist for results.  I'm only nervous like... a lot.

I do have dinner planned for that day but if my appointment runs long I have some backup dinner in the freezer.  I have corn dogs. I emergency corn dogs.  Don't judge me.  Last week I said I was going to try out some new recipes and this week there are four of them.  I will be talking more about some of them and where I found them later on this week.  All you menu planners and those who are trying to make healthier habits should stay tuned!  But for now, here is what I am working with!

So there you have it.  I know what you are thinking.  HOLY CHICKEN!  I know.  There's so much chicken.  Didn't realize it until I just wrote it out.  The flavors of everything should be different enough to keep the boys from getting tired of it.  I hope.

Whats up Weekend { March 2nd }

Happy Friday.  And Happy March.  How did that even happen?  I feel like the year just started and we are already 3 months in.  Time is just in a rush this year I guess.

We all know Fridays around here are for sharing all the good from the week.  The things that made us happy.  Moments that made us smile.  All all the things we are grateful and thankful for this week.  This week was actually a great one.  This week the brain fog has been a little wild, and we have been dealing with asthma and allergies but it has still been a great week.

Today got away from me.  But I did manage to get all my library books back on time.  I walked to school and got all my steps in and played outside until I had to come in and get dinner started.  And now I am relaxing on the patio and realized I hadn't gotten to my post for today.

Today I am only sharing one thing.  One thing that has given me so much happiness and lifted so much weight off my heart this week.


This kid, this picture, made my whole week.

Anthony, smiling, laughing and lighthearted.  I would give anything to see this side of him more often.  As I walked home that morning all I could think was how happy I was to see him like that.  

Last weekend we were in the car and I told him that I was so proud of him.  His thought I was joking.   He rolled his eyes and asked, " why?"  So I explained.

I am proud of you for always doing you no matter what anyone else thinks.  

I am proud of you for going to school every morning knowing someone will tease you or laugh at you.  

I'm proud of you for focusing on your school work and always trying your best.  I know how hard it is when you are so aware of and trying to control your tics.

I'm proud of you for making good choices when so many of your peers are not.

I am proud of the kind and respectful young man you have become.

Every morning when I watch you get on the bus I am so inspired by your courage.  

And every night I am taken back by how much you have grown.  Gone is my little raspy voiced boy who needed me by his side.  And in his place is a young man who is itching for a little more independence and trust.  

I see you son. And yes, I am so incredibly proud of you!

What is everyone up to this weekend?  I still need to finish painting Anthonys room.  Id like to get out and let the boys run off some energy before we head over to a BBQ with friends.  I also have to get some groceries.  I have some new recipes I will be trying out and can't wait to share them with you guys.
