Menu Plan 10•5•20

I don't know if it was just me, but the weekend kinda blew though here.  One minute it was Friday and suddenly it is Monday and Im still standing here trying to figure out what the heck just happen.  Le sigh.  I guess that means its just time to get on with it.  

Menu Monday

First things first, FOOD!  The pantry and fridge are locked and loaded and this weeks menu is ready to go.  We decided that one day a week we will try to have a meatless meal so that we can all sit down together and have dinner!  Im so excited for this.  We actually used to do this a while back but some how lost track.  It will be nice to sit down and really share a meal again. Here is what this weeks menus look like.

I have really been struggling with this meatless things.  I tend to taste as I cook.  The other day I was halfway though a chicken tender before I realized, I was NOT supposed to be eating it.  And then Alex, bless his heart, asked me if I just wanted a tiny taste of his because he knows how I loved those damn things.  Which says a lot because that boy is usually following me around asking me what I am eating and inspecting my plate out of the corner of his eye.  Thankfully Anthony had a friend over and the leftovers didn't stand a chance against 2 teenage boys.  On Saturday, David took me to Sams club to get all the veggies and non meat things I could find.  Fruits, Veggies and Nuts for days.  I also got a giant bag of cauliflower rice. Yay... Im trying really hard to like it y'all.  The struggle is real.

Im going to try to get next weeks menu together no later than Friday, so I am already looking for more recipes.  Im also hoping we get more cold days because I think I need some soup in my life.  Or even some good vegan chili.
