Menu Plan: August 21st

This is it guys, the last week of our Summer break and the emotions are running a little wild right now. In one week I will have a 3rd grader and an 7th grader. Alex is excited about seeing his friends again but already worried about STAR testing. Anthony still isn't quite sure how he is feeling about it all.  Me, well I just want to get through this week and then the next. I really do hope this year is easier on them both.

But for now I'm just going to do the 3 things I said I was gonna do. Well atleast the first 2 things anyways. Although the 3rd thing did make last week so much easier. And the goal for this weeks menu was to stay out of the kitchen as much as possible.


Chicken patties. So I remember the first time I had chicken patties. I was in high school the first time I had them. I was at a friends house and her mom fried them up and we had chicken sandwiches for dinner. I thought it was the most awesome thing ever. See this was something Dad would have just made from scratch. The first time I put a chicken patty sandwich on the table, David looked at me like I had 2 heads. Growing up his mom served the patties with mashed potatoes and corn. And gravy! Like mock chicken fried chickens I guess. And since he was so good about all the cauliflower rice last week, I figured I would give in to his request for it this week.

Lemon Pepper Turkey is a favorite around here. I got the recipe from a local blogger/photographer and never would have guessed it would be such a hit with these guys. But they ask for it weekly. But its as simple and browning ground turkey and seasoning with lemon juice and pepper. There was an overwhelming vote for brown rice with this. And broccoli instead of asparagus.

I didn't get around to making the meatloaf last week. I'm not gonna lie, we ended up having pizza after swim class on both nights. No judging allowed. This is also part of why we are just going to have sandwiches after class this week too.

Green Chili Chicken is such a tasty dish. It actually taste just like what I make my chicken enchiladas with just not rolled in a tortilla. We usually just have it with a big salad instead. Although I am craving these half flour, half corn tortillas my friend gets. Taste like corn but are soft like flour and are so delicious.

I hope everyone had a great weekend. We sure did. I told you guys we would get into some kind of trouble.  Don't worry, no one was arrested, only a little blood was spilled and the only tears were from laughing at our bad choices.
