Menu Plan 8•3•20

And its Monday.  Again.  Yay!

Im trying really hard to stay motivated and moving today.  I slept in a little.  But got up and took my meds, squeezed in some facetime with mom and my sisters and even had coffee and oats for breakfast.  I stayed up late yesterday getting things done so I would have less to do today.  I need to fold laundry and wash towels before the boys take over the laundry room.  And I have some cooking to do.

After a really rough week with my H.E, I have had to give up meat for the time being.  I have had a taste here and there while I was cooking or what not, but I have not sat down and had a meat meal since last Monday when I had a half a rib.  Last night I told David that I legit scared myself into an almost vegetarian.  I am still cooking meat for the guys but this week I am prepping a special meal for myself for dinners that I can't modify.

We still had a ton of meat leftover from our Sams Club meat haul the other week.  And we had so much leftovers last week that I didn't make the Lemon Pepper Turkey so that rolled over to this week too.  Even though we are having another ground turkey meal.  But that just means they will be eating kinda light this week and thats ok with them.  

I am excited to try this coconut curry recipe.  One, because I had almost everything on hand already but also because I love curry. BUT!  I have never cooke lentils before so send me some good cooking vibes or something because Im gonna need it.  Im hoping to make one or two meals to last me the week and then just take what I am cooking for the guys and add a little something to the sides for me to eat also.  We will see how this week goes and go from there.  Id be lying if I said I was bummed we weren't going to a steakhouse for my birthday dinner, but I know I just can't.  I might just ask for a ton of crab legs?  That might work.  Or I could grill steaks for them and some more fish or octopus for me.  OMG Is it lunch time yet?  Now Im starving.

I hope everyone had a great weekend.  I am so happy to be feeling more like myself again.  And I am even happier and a little amazed that I didn't end up in the hospital last week.  It was pretty bad.  But we have been preparing for this for years.  David did admit that I scared him and that was a real eyeopener for us all.  If David is worried, shit has officially hit the fan.  So now we regroup and refocus.  We have a plan as far as food goes.  I have had to double my meds and stay onto of my hydration.  And the boys know what to do incase of an emergency.  Welcome to life with a Budd Chiari Syndrome.  Plus some.   

We are moving forward.
