Menu Plan Monday { April 23rd }

It's almost 1pm on a Monday and I have not had any coffee yet.  This is not a drill!  It's just a Monday.  Ant is home sick...again.  He said his stomach hurt real bad and he could not go.  And while I would usually question him even more before letting him stay home, I just told him to change out of his clothes and go back to bed.  And then it felt like someone pulled on my intestines.  Good news is he wasn't faking it.  The bad news is that he proved it by sharing it with me.  Either way, hello stomach bug.  UGH!  So, no coffee, but so much water!  A banana and some meds seem to be doing the trick.

I almost can't even think about food right now but since its Monday I am going to share our menu and look forward to a nice shake for my own dinner.  Plus last week I totally bailed on cooking.  We had a ChicFilA spirit night for the school and then I took Friday off and went to bed early so David bought a pizza.  But you guys!  I slept from 5-7 and then from9-6am.  By the time David woke up Saturday, I had done 4 loads of laundry, finished my grocery list and cleaned the house.  Makes me want to clock out early every Friday! I just might do it again this week.

David texted me from work one day laughing because he said he was eating this "healthy meatloaf" that his wife makes.  His co-worker laughed and told him meatloaf isn't healthy.  Let's just say compared to other recipes out there, this is the healthier option.  That's a better description. They are a little over 100 calories a piece.  Plus low carb and pretty clean and not packed with sodium!  And the best part is, the boys love it!

The Jalapeno Chicken and these Firecracker Meatballs are new and I'm not quite sure why I am making two new dishes back to back, but what the hell!  I usually make THIS version of Jalapeno popper chicken and its good too, but we are going with fresh jalapenos and skipping all the extra cheese and pork rinds.   We picked the meatballs from the photos alone.  They look good.  That and Anthony called them Fire Balls and said I just had to make them for dinner.  And then belted out This Girl is on Fire by Alicia Keys, with a few word swaps of course.  Any guesses how that went?  I just can't even with these boys sometimes. Gah!

I am totally winging side dishes this week.  I bought a load of fruit and veggies and will just let everyone pick and choose what they want.  I did get bacon and cabbage because all 3 of them asked for THIS again!
