Menu Plan Monday: February 6th

These Mondays just keep sneaking up on me. I swear it was just Friday!  It is what it is though. Its Monday. And that means it's time get it together!  Last week kinda threw me off.  I barely had time to sit down. I was totally looking forward to having a nice snooze after my endoscopy but no, I was up and walking through the hospital to my next appointment no time.  My body is tired but my brain is running a mile a minute. It's all so exhausting. 

Weekend highlights?  A birthday party at Peter Pipers which lead to the realization that thankfully we don't gamble with real money.  Those one coin plinko games, where you try to knock more coins off the ledge, are beyond addicting.

Operation "Alex wants a Tortoise" is complete.  We finally got to bring him home on Saturday and have spend two days helping him get settled in.  We do have a few things to change in his enclosure, but hes home and hungry. I can't believe how much this little guy can pack away. Alex is still deciding on a name, so if you have any suggestions, please feel free to share. Otherwise hes going to name him Igor.  I don't know where that came from but that's his top name and I don't know why but it's not my most favorite. Like, at all.  But what do I know?!


My menu!  There is something I know. I also know that after eating like crap last week, I'm feeling like crap too.  But I think we are back on track this week.  We will be anyways!  Here is this weeks menu. 


MONDAY:  Mozzarella Chicken and salads

TUESDAY:  Steak Taco Lettuce Wraps

WEDNESDAY:  Garlic Butter Chicken and Corn

THURSDAY:  Lumpia with Cauliflower Rice

FRIDAY:  Lemon Garlic Herb Salmon and Salads

OK, so Thursday isn't the most healthy meal but I have a mad craving.  I'm not sure I will be able to wait all week before I give in and make them.
