Menu Plan Monday: March 21st

Well that week went by fast!  Spring break is officially over and we are back to the grind.  Thankfully both boys were actually excited to get up and go to school.  Well, mostly they were excited to have bagels and cream cheese for breakfast.  If I had known they would both eat breakfast without me having to beg, I would have buy them on the regular!  Now I know!  

Last week we ended up taking a last minute trip to the beach so I didn't do much cooking.  Totally not complaining.  It was foggy and not at all spring like, but I didnt' have to cook or clean and I fell asleep to the sound of the waves.  David apologized for us not being able to stay longer but honest to go, one night in a hotel, made the whole week for me.  And the boys got to jump on the beds and swim in the pool so their constant begging for a hotel has been silenced.  For at least this month.  I did make the Salsa Verde Chicken Pasta that I have been putting off forever and it was so good.  Thumbs up all around!

This weeks menu is nothing special.  Alex wanted lumpia, but there were no wrappers or ground pork at the store and we were running late so we scratched that off the list.  And never filled in another meal.  Which is totally OK, because my fridge is bursting with leftovers!  And I hate throwing out food.  So here is where we are.

Monday:  Leftovers AKA operation no wasting food.
Tuesday:   Oven fried chicken, scalloped potatoes and roasted zucchini.
Wednesday:  Spaghetti with salads and garlic bread.
Thursday:  Leftover spaghetti and pork chops.
Friday:  Baked fish with mac n cheese and salads.

I still have bread and cookies to bake for the week.  My melon isn't quite ripe enough to be cut up.  This morning when I told the boys they were having pizza for lunch, Alex said "Pizza and what?"  I forget how much he can eat, so I added a banana and he added a handful of Pringles.  I don't know where he puts it all. Growing boys NEVER stop eating!
