Menu Plan Monday {June 4th}

It's finally here!  The last week of school.  I still have a few things to do to prepare myself for Summer so I'm hoping the week doesn't go by to fast. But I'm so ready to start our adventure that I am kind of hoping it does.  Plus I know that once Summer is started we are on a clock to fit in as many memories as we can until the next school year gets here.  Summer Break goes by quick and we have quite a few things to do this year.  Are you ready for Summer Break?

But for right now, I am going to get my menu written out and focus on just Monday.  One day at a time.  It will be Friday before I know it!

I feel like I should explain this weeks menu.  I know it looks like something a single 22 year old man might plan.  One who didn't care about carbs or calories.  It was actually planned by my 9 and 13 year old boys who 1, wanted a break from all the veggies and 2, though these dinner ideas would cut a lot of moms stress out the week before vacation.  Bless their hearts, how could I say no to that?

Here is what they picked!

MONDAY
Lumpia and Chicken Long Rice

TUESDAY
Leftovers

WEDNESDAY
Hot Dogs on the Patio

THURSDAY
Sausage Rice and Corn

FRIDAY
Pizza

It's probably the most unhealthy and most processed menu I have ever had, but they are right.  The less time making a mess in my kitchen and leftovers in my fridge, the less I have to worry about.  I hate throwing away food and this way I know I can leave with an empty and clean fridge and kitchen.  Does anyone else feel like their house isn't 100% clean if the kitchen isn't clean too?

Don't anyone worry, I still bought a lot of fruit and veggies to squeeze in here and there.  Berries in their pancakes, veggies, and dip for school snacks.  And even though we will be on vacation, we will go continue to plan most of our meals.   We got a rental house mostly for the kitchen.  OK mostly for the pool, but having a full kitchen was a big plus too!

Not going to lie, I have a running list of things I NEED to eat when we go to Disney, but I heard Disney calories don't count either so, I should be good! Right?

Whats on your menu this week?  How do you feel about vacation calories? Do they count or no?
