Menu Plan 3•30•20

And just like that, its Monday again.  A friend reminded me last night,  that the day will be what we make of it and I am determined to make it a good day.  Im not even expecting it to be a great day.  This weekend was a bit of a train wreck.  What should have been a tune up on our AC turned in to replacing the inside unit.  Again.  Long story short, we did not have the extended warranty.  Now we do.  And we paid a pretty penny for it.  Again.  Le sigh.  Im over it.  It's done and Im moving on.

Menu Monday

Let's talk about something happier.  Like food.  The last few weeks may have been frustrating, but Im switching mindsets here and going to be thankful for what we have.  Because lets face it.  If there is food on the table every night, that is a blessing in its own.  We only had a to grab a few things this weekend because we are going to keep it super simple.  Like meat and salad simple.  And yes, rice!  Because thats how we like it.  I actually found a 50lb bad for $16 so theres that!  Its one of those hard to come by things here and this bag will be enough for us to split with Grandma.  We are set for months!  So here is what we have lined up this week.

Baked Pork Chops

Turkey Fried Rice.

Mostly we are just cleaning out the fridge and freezer again.  Trying to use up what we have in there and save what we didn't spend.   Yesterday we threw some steaks on the grill because we were all needing something a little more filling.  Couldn't find any potatoes, but we had some cold and crispy caesar salads with it.  We got the club pack of romaine, so there will be lots of salad.  So good. 

Whats cooking in your kitchen this week?  Are you able to find everything or are store shelves still looking sad in your area?  We found the secret stores though, so now David knows where to get what we need.  Eggs are still unicorns though.  Cant find them anywhere.
