Menu Plan Monday-ish 10•15•19

So much for a Menu on a Monday.  The weekend got away from me and life has been a little crazy.  Whats new though?  Crazy is the story of my life!  And now its Tuesday, the boys are off to school, Davids working and I am here.  Dishes are done, I'm on my 3rd load of laundry, the puppies are napping off their breakfast and I am debating on a giant cup of coffee or water.  I forgot to order more coffee and I a certain teenager loves some Tim Hortons as much as I do so I'm down to 2 K cups.  The struggle is real!

I totally forgot to post my menu yesterday but with David out of town and the boys home, not a damn thing got done like it should have.  Today is a new day and my menu was planned just not shared.  And when David got home, we went out for dinner instead so I moved some things around.  Here is what I settled on.

MONDAY
Went out to eat

TUESDAY
Garlic Butter Shrimp
Asparagus

WEDNESDAY
Baked Chicken Legs
Roasted Broccoli

THURSDAY
Oven Fried Pork Chops
Salads

FRIDAY
Kung Pao Chicken
Brown Fried Rice

SATURDAY

SUNDAY

Mashed Potatoes

I'm looking forward to a short week!  I wish all weekends were 3 days long.  Its a game changer for sure.  David was up in Houston for an interview.  And while we are pretty sure that the other guy will get the job, seeing how excited he was for a change makes me sad that hes kinda stuck in his position. At this point the only way up is out...of San Antonio.  As sad as that would be, financially it would be the right choice.  So if not this time around, maybe it will be the next time.  I would gladly deal with people being upset that we left than to watch my husband stress over providing for us.  He always finds a way but to take even a little bit of that burden off his shoulders, I would pack up and move across the world if we had to.  The boys are slowly digesting the idea but they will come around.  Guess all we can do is wait and see now.

I hope everyone had a great weekend.  That you spent time with you family or friends.  And that it was full of fun and laughter!  I really do wish that for each and everyone of you.

Do you have your menu planned for the week?  What are you looking forward to the most?  There is a reason the first thing on our menu is Shrimp.  I could eat seafood every day for the rest of my life.  No joke!  We haven't had pork chops in months so that should be good too!

Happy Tuesday everyone!
