Menu Monday 8•19•19

OK Monday, I guess I'm ready for you.  As ready as I'll ever be anyways.  It's time to get back to reality.  Vacation mode is off.  Time to grind and get ready for school next week!


After a week of hotel breakfasts, lunch on the road, dinner dates and take out from the neighborhood lumpia lady, I am ready to get back in the kitchen.  I am stocked with all my groceries, snacks, and even a few secret desserts.  At least they are supposed to be a secret.  The boys put away groceries and didn't mention anything so hopefully they didn't put two and two together.

MONDAY
Quinoa Enchilada Skillet
Salsa and Chips

TUESDAY
Turkey Taco Lettuce Wraps

WEDNESDAY
Salisbury Steaks
Potatoes
Salad

THURSDAY
Baked Salmon
Green Beans
Summer Squash

FRIDAY
Tofu Stir Fry
Brown Rice
So Monday and Tuesday are super similar in taste.  I thought about spreading them out a few days, but then I remembered.  Avocados!  One days they are still hard and the next day they are black on the inside.  Oh no, we are going to get this show on the road!  Seriously.  Avocados are more temperamental than my teenager!

I figured by Wednesday they guys will be ready for something heavy and more filling.  So we are going to do Salisbury Steaks.  I was thinking about making them into meatballs instead, but I guess we will just have to see how fancy I'm feeling that afternoon!

Thursdays dinner is a favorite of ours.  Salmon is life!  Seriously.  I totally bought the frozen stuff, but whatever.  It works. And this way I know I will have enough for some leftovers.  It's such a super simple recipe and I will get to use my new baking dish David got me for my birthday!

On Friday we are having a tofu stir fry.  This is only my second time cooking with tofu but I am sure it won't be the last.  I figured I would save this dinner for a Friday in case I mess it up. This way if no one likes it, we can just make something else.  And with it being the weekend, late dinners are cool.

So, there you have it.  Our last week of Summer is here and the menu for the week is easy but full of flavors.  I can't wait.
