Menu Monday 7•22•19

Well it wouldn't be a Monday with out something going a little off schedule.  I started coughing last night and haven't stopped.  Its so bad that I didn't fall asleep until after 7am and slept until 9:45ish.  OH Mondays!

But the show goes on!  So I'm up and getting the day started.  A little late, but better late than never!  First things first, I'm nailing down the menu.  Although nailing might not be the right word.  I have been bad at sticking to specific days.  Last week I forgot I had to marinate chicken, so we had to swap a few things around.  This week, maybe I will stick to it.  Tonights dinner will be as planned because it's easy and they can almost do it all by themselves.  Here's what we are having this week!

Clean out the Fridge night


It's a super easy week.  Going a little light today with wraps.  I wanted to start the week off easy. Tomorrow is our big meal.  Chicken and rice is such comfort food for us.  I'm trying a new recipe for the buffalo chicken that I am hoping is amazing and will be perfect in lettuce boats.   And Thursdays Kung Pao Chicken is a super easy and healthier version, with green beans and a boatload of flavor.

And I'm loving these Friday clean out the fridge nights.  The boys hit weekend mode as soon as their chores are done and they are either to busy hanging out with their friends or playing video games so I let them do their thing.  The rules are, you have to eat your dinner before 7 and you have to grab it yourself.  Leftovers are fair game.  If you want it, you better eat it early.  And if you want something else, there is always something quick in the freezer.  I can't tell you enough how awesome it is to have kids who know their way around the kitchen and actually like cooking their own food.  And if needed, I will help.  But it's good for them to bumble around in the kitchen.  Learn how to read directions, turn on the oven, cut up some veggies.   My goal is to make sure that my boys are comfortable in the kitchen by the time they leave home.  I'm not being lazy.  I consider it life training!
