Menu Plan Monday: March 30th

The weekends just keep getting shorter and shorter. I was looking at the boys school calendar and realized we are in the final stretch of the year.  Nine more weeks of school with what seems like a holiday or half day every other week.  This week is a short week and I'm super excited that we get to go to Houston this weekend.  But first I have to get through the week feeding the bottomless pits that are growing boys.  So here is what's going on this week in my kitchen.

Chicken wings with salad and veggie sticks

Chicken Enchiladas with rice and beans

Shrimp Scampi and salads


Dinner with the boys in Houston

I'm not sure what the plan is for the rest of the weekend is because I don't know when we will get back to town. There is so much we want to do there and who knows how long it will take.  My guess is Saturday, but who knows.

You know me, keeping it simple as usual. Anthony has STARR test today and tomorrow and has been stressing over it, he picked enchiladas. Alex is my Shrimp king.  Usually when I ask for suggestions everyone grumbles and never has any idea. So when they do have some ideas I will make just about anything. As long as its not cake. Well not on a school day anyway!

Whats cooking up in your kitchen this week?  I am really needing something new. I'm finding that chicken and turkey are about all my body will put up with.  Red meat is a once a week or every other week thing now.
