Menu Plan 9•5

Oh hello!  Its been a while since Ive popped in on Monday to talk food.  But here I am. Trying to get my life together.  And what better way to start than with food.  Labor Day weekend went by so fast and I totally forgot it was Monday already.  Le sigh...

But I did get my grocery delivery today and I have to admit it feels so much better when I know there is food in the house. Boys eat all the time and all the things so I try my best to make sure we stay stocked up on healthy and yes, some not so healthy snacks.

Menu Plan Monday

Here is this weeks menu in no particular order because I'll be picking meals based off how I feel each day. Classic life with chronic illness.  I have learned to keep my expectations a little more realistic.

Homemade Chicken Pot Pie

Salmon Maki Bowls

Lumpia and Cauliflower Fried Rice

Buffalo Chicken Salads...again

Can you tell that Alex chose most of the dinners for the week?  Lumpia, pot pie and buffalo chicken are all on him.  He would pick those 3 dinners every week if he could.  I don't mind making the pot pie.  My crust came out a little dry the last time. So hopefully this time its better.  I am going to make cauli fried rice with the lumpia instead of regular fried rice. Figured if its fried, I might as well balance it with some veggies! And then there is the Buffalo salad.  He loves this something big and who am I to tell him he can't have a salad every week.  I have mine either minus the chicken or just without the sauce.

I got myself a few extras to make myself some veggie filled lunches.  The plan is to have a tomato and cucumber salad and Im currently loving air fried sweet potatoes and brussels sprouts. I have some artichokes too. And if I think I need a little something more, there is always salmon.  If the boys don't eat it all in their Maki Bowls.  Pray for me!  

This weeks Oh Shit meal is chicken nuggets and fries.  Anyone else plan OS meals into their menu?  Having something that the boys or I can throw together when I am not feeling well is such a lifesaver. If you don't do it already, you should.  It doesn't even have to be frozen processed stuff.  Just having a go to recipe or meal that you can keep in your back pocket in case of emergency, or in my case chronic illness. There should always be some kind of a plan B! 

So there you have it.  This weeks menu is for the most part easy and quick.  The lumpia take some time rolling, but after doing it for so many years, its relaxing now.  We have a variety of flavors and presentations.  A little bit of everything but this week, yes, its mostly comfort and a little on the heavy side.  Next week I will lighten it up a bit.  I just didn't have the energy to say no.  And so they get what they want!
