Menu Plan 8•16•21

Happy Monday! 

I heard someone the other day say something about wanting school to start up again so she could get more things done, but I kinda feel like things just keep getting crazier.  When does it let up?  Is this really what its like to be an adult.  Always saying "OK after this, things will calm down."  Like every week?   Le sigh.

Hope Whispers Menu Plan

We are one week into school and our routine is slowly figuring itself out.  The early wake ups.  Busses, bells and class schedules.  Trying to work around the boys getting home and having dinner ready at a decent time.  Thankfully David is around to pick them up so I can do my thing in the kitchen.  Last Friday, I may have fallen asleep when he left and slept until dinner time.  My bad!  This week I have planned a quick and easy menu that should help things run smoother than last week.

Mondays always seem extra wild, so Im keepings that day my easiest.  Southern Chicken patties from HEB get topped with lettuce and tomato and Chick Fil A sauce.   The guys love it.  And we can get our unhealthy meal of the week out of the way!  I will be making Roasted Broccoli and Quinoa Salad which I love. I just need to half the recipe this time around.  Last time it made so much.  I ate for days and still ended up tossing some out. 

The Baked Lime Chicken is one of my favs.  Not only is it super easy to throw together the night before, but it tastes so good and goes great over salads.  The guys prefer a heartier meal, so they are getting rice and broccoli with it.  I will still be eating leftovers.

On Wednesday, I'll mix up a meatloaf for the guys and roll myself some meatballs.  No recipe here, I got one of those meatloaf seasoning packets and need to use it, so the guys will eat that.  Its processed and crazy full of sodium so I will be tossing up a little turkey and a lot of veggies and making meatballs to have with whatever veggies I end up cooking.

Thursday will be Stir Fry night.  And I only have to cook one meal.  The sauce is made of coconut aminos, rice vinegar, orange juice, honey, sesame oil and cornstarch so as long as Im not knocking back all the sauce and I give my meat to someone else, I should be good.  Ill use the leftover rice from the pilaf to make fried rice and get more veggies in!  Totally a win.

Friday is a salad night because the guys usually stay up later since its the weekend.  Keeping it light since, we all know they are bound to snack later on in the night.  Im learning to pick and choose my battles and this one, I am so over.  And this is how I choose to fight it.  A crap ton of veggies with some grilled BBQ chicken on top.  Tofu for me.  This way when the boys come down for a bowl of cereal or some other snack, I know they filled up on veggies first.  

Menu Plan Monday

My goal for this week is to have next weeks menu ready to go by Thursday or Friday.  Im trying really hard to be mindful of what I am eating. And getting back in the habit of planning for double the amount of dinners has been a bit of a struggle.   Im open to any suggestions!  Meatless or not, what meals are you loving these days?  Let me know below!
