Menu Plan 1•18•21

Holidays always throw me off.  I woke up and almost took the trash out even though we did it yesterday.  Hopefully this coffee will kick in and I'll catch up to the rest of the world. Probably not but a girl can dream!

This week I am focusing on what Im eating and that I am eating enough.  I saw this video about "those moms," the ones who sit down at the end of the day and boast about all they ate all day was their kids leftover lunch.  Like it was a good thing.  I do that.  Not so much the boasting part but the eating one half assed meal and thinking it is ok.  The woman then went on to ask why do we glorify this.  Why do we say this with no sadness for ourselves.  If it were a child, we would not be ok with it.  But because we are moms, we get scraps?  Any other moms out there thinking, crap... I do that too?  I digress.

Hope Whispers Menu Monday

This weeks menu was changing right up until the last minute and I didn't even put the order in until Sunday night.  But its done and Im excited for a week full of delicious food for all of us. Let's see what made it on the list this week.


Steak and Salads
Arroz con Pollo with Rice and Beans
Pork Chops with Roasted Potatoes and Veggies
Lemon Pepper Turkey with Brown Rice Pilaf & Greens
Burgers on the Grill


Cauliflower Steaks and Veggie Kabobs
Red Lentil Curry
Veggie Stir Fry

I had steak salads planned for a nice light Friday night dinner, but the guys asked for their own steaks so I just went with it.  They actually asked for 3 different beef dinners but David suggested chicken with the Spanish rice instead of carnitas, so that worked out.  Its a heavier week for them, but we bought meat in bulk last week so Im just enjoying the fact that my grocery list for this week was way under budget!  Winning!

As for my menu, my cauliflower steaks were good and the veggies too.  I love grilling.  And I love grilled food.  But Ive also been craving something a little more spicy, so I got some chilis for the curry and the stir fry.  I don't know what has come over me because I used to pass on salsa because it was always to hot.  Now I look forward to the burn.  I will make the curry ahead of time and Im also going to half the recipe because last time I ate it all week and still ended up tossing some.  But its so nice to have it prepped and ready to go when I need something to eat.  The stir fry I want fresh because I like my veggies just a little undercooked and crunch and not reheated.  My mother in law says Im picky about my food.  Not so much the food but the way its cooked.  And it has to be hot!  Like burn your mouth hot.  Its just my thing.
