Its the last day of the month! I can't believe we are already to December. Of 2020. I keep going on about how ready I am to be done with this year, and I am. But there were a few good things that came out of all this craziness. Getting to spend so much time with the guys. Having the boys home for school. And so many more little things that all add up. Im just here, trying to see the good in it all. You know me.

Anyways, its Monday. And that means its time for another menu. This weeks menu is comfort filled. Its going to be a chilly week here in Texas, so we are staying warm from the inside out I guess. I have been allowing myself a few bites of meat here and there. Last night I a chicken wing with my dinner. Living on the edge over here. I kid, it wasn't much at all, BUT this week I will be cleaning up my nutrition. It's time to focus. Here is whats on the menu this week.
THE GUYS MENU
Turkey Pot Pies
Chicken Tacos
Hamburger Macaroni
Clam Chowder
Turkey Lettuce Wraps
MY MENU
Sesame Sriracha Nourish Bowl
Cannellini Bean Salad
Winter Cauliflower Rice
Corn Chowder
This week is on of those week where nothing sounded good to me so I am just cleaning out all the veggies and such in the fridge and making it work. The Nourish Bowl is a little pre packaged mix that I got from HEB. It looked good, but Ive never had it before so we will see. Fingers crossed.
As for the guys menu, the pot pies tonight will use up the last of the turkey from Thanksgiving Dinner. And I am going to take one to Grandma and Grandpa because there will be plenty. Tacos are the easy meal since I got pre marinated chicken. Hamburger macaroni is a childhood favorite of mine that I have now passed on to my boys. I might be a little sad about missing out on this meal. Clam Chowder is going to be perfect on the coldest day of the week and then there are the amazing Thai lettuce wraps that everyone loves because I had to squeeze in a healthier meal in there somewhere.
There has been a lot of talk about the guys starting to eat less meat. Every now and then we throw in a meatless Monday but I would love to do it more often. Im thankful that they don't complain about what I feed them and are usually really good at suggesting meal ideas. But I know that they like a little weight to their dinners. So Im a little hesitant.
Whats cooking in your kitchen this week? Let me know below.
Happy Monday Everyone!
