Menu Plan 9•28•20

Happy Monday!  I hope everyone had a great weekend.  We pretty much relaxed all weekend.  Hung out at home, played video games with the boys and of course David watched football while I put together this weeks menu plan.  I was feeling so confident about my menu planning skills but struggled a little this time around.  I think I let myself get a little hangry and then got salty about cooking food that I knew I can't eat.  Don't judge me!  I am not usually this emotional, but damn its hard to cook for them and know I have a plate full of veggies waiting for me.  Not that I don't love my vegetables, I do, like a lot, but I LOVE meat.  And I still miss it even though I know it isn't good for me.

I totally slacked on planning ahead and the guys menu reflects that.  Its not awful but its not as "light" as I would have liked it to be.  But it is what it is.  And they all promise to give me ideas for next week. Im going to hold them to that too.  Let's take a look at what landed on our menus this week.

THE GUYS MENU

Buffalo Chicken Siders

Tostadas

Chicken Tenders

Arroz con Pollo

Baked Chicken

MY MENU

Rainbow Lentil Salad

Cauliflower Fried Rice

Veggie Taco Bowl

Tofu Stir-Fry

Leftovers

The guys are eating for comfort this week.  I may or may not have gone on strike over the weekend and had them fend for themselves.  Poor guys.  Anthony ended up making burgers for them on Saturday and they did use up some things Sunday that needed to get gone, so thats a win in my book.  But I will have to be better about making sure the next time I refuse to cook I have something less messy for them to make.  Dirty dishes are even more annoying when you didn't make them.  Messes too.  Thankfully everything Im making them this week is easy to make and clean up.

Im determined to prep my food as much as I can this week so that I can eat at the same time as them.  I have been cooking back to back so I haven't had many dinners with them.  And if you know me, you have to know how hard that is because family dinners are so very important to me.  They are my favorite time of the day and I have been missing out on our usually "dinner talks."

Are you a menu planner?  If you aren't, and want to be, let me know how I can help you.  Need recipes or tips?  I love talking food, so let me know!  And if you are, still, let's talk food because, next week will be here before I know it and I really want to have my menu planned by Thursday.  There, I said it.  By Thursday, I will have my menu planned.  Let's do this!

Have an amazing Monday everyone!
