I am determined to get this week started off on the right foot. Even if I did sleep in a little. I tossed and turned all night. Had some crazy dreams and slept straight though my first alarm. So once I was up, I kinda feeling like I should kick my butt into gear.
I got my to the dishes and laundry before the sun came up. Had my coffee in hand when the first sleepy boy appeared in the kitchen. They requested egg and cheese bagels for breakfast and then as soon as they were done, it was school time.
Now Im here sitting down on the floor where my desk used to be because we moved it into Anthonys room. Y'all, I have my space back! That is probably why I am in such a good mood today too. Last week Anthony was doing school in my room and with Alex in the dining room, I felt like I couldn't do anything with out disturbing them. Now my music is up and Im trying to get the week planned out. Starting with the menu!

I will be having
Black Bean and Corn Quesadillas
Kimchi Fried Rice
Quinoa and Veggie Salad

Life has been interesting since I cut out most meat. I have never been one to make more than one meal for dinner, but here I am. Making a second dinner for myself. Thankfully I am ok prepping for the week and eating the same things all week. That helps. The hardest part is trying to figure out even more meals. Le sigh.
I want to start squeezing in our weekend meals into the plan too. But maybe next week. Although Im hoping this weekend we get to make a movie night work. Mulan is coming out and Id love to them a dinner to go along with it. So we will see.
But for now I need to finish up some cleaning, jump in the shower and head to the hospital and get my monthly lab work. Im hoping it stays monthly but with my diet changing there is a pretty good chance it will be off. We shall see!
