Menu Monday 6•17•19

I'm going to need the time to slow down a little bit.  We are 2 weeks into Summer and I feel like I am already running out of time.  It could be that we spent most of last week in between doctors and one appointment after another.  I was supposed to have Liver Clinic today but that got bumped to next month,  I do have to do labs to update my MELD score this afternoon but mostly, I am taking today off from any kind of doctors office. 

But I am sure I will have a call or two from a doctor.  Anthony did his MRI on Friday and his Endocrinologist should have the results today.  She is pretty awesome at getting the ball rolling on things so I figure she will call me today with a game plan.  I'm excited and a little nervous about this whole growth hormone adventure we are about to start.  My anxiety is growing just thinking about it.  Ahh!  Let's start the week of with something super easy. 


Like food.  Because we all know I can talk about that all day long.  The only request for this week was that we have some "non chicken" dinners.  I think 2 days and 5 very different flavored dinners should be OK.  Here's what we are cooking up this week...

Green Chili Chicken Casserole


I have to admit that even I am looking forward to dinners this week.  Tonights dinner is one of the first things Dad taught me how to cook.  He was leaving on TDY and I was in charge of cooking.  I had a few things that I had recipes for and a few things he had made ahead of time, but I was pretty much on my own when it came to getting it all cooked and on the table.  It typical Jim fashion, there has never been a recipe to follow.  Just throw in spices until it smells good and is the right color he said.  What mattered most was that it was made with love.   Well I tell you what, it was made all right!  Many times after that when I made dinner.  Mostly with love and sometimes not so much but its the so easy it became my fall back dinner.  Even now.  This week the boys will be making it with me.  I cant wait!

The rest of the menu is made up of recipes that I totally picked by the pictures.  Don't judge me.  I figured Id save the casserole for Friday since these guys aren't ever super excited about casseroles.  Unless its tuna!  Plus if its not a hit, David wont have to take leftovers for lunch the next day!  Fingers crossed it is good and filling enough for them.
