Menu Plan { August 20th }

Happy Monday Y'all!  

Its not even 5 am and I am ready to rock!  What?  To early?  OK you caught me!  My eyes are still waking up, my hair is a hot mess and I am wondering if I could Uber Eats a giant cup of coffee, but I am up.  And so I figured I'd get a start on this whole getting back on track thing.


Another truth, I'm not prepared for this day at all!  Went to get some coffee and realized, I'm out.  Not sure if tea is going to cut it, but I'm about to find out!  This afternoon bring labs, the last of the school shopping, calls to the pediatrician, neurologist, vet and transplant clinic.  I have a pile of laundry I am about to start as soon as the dishes are unloaded.  Somewhere in there Im hoping for a nap and getting dinner cooked on time.  If I can find the Salmon in the disaster that is my fridge.  I should probably do something about that situation too.  After dinner.  Seriously good eats tonight!  Can't wait.  What do you think? I have been craving this salmon all summer but Alex suddenly isn't a fan.  Of all the things he will eat, Salmon has landed on his "no thank you" list.  But he loves sashimi.  Weirdo.  Its very rare we find something they refuse to eat.  Oh well.  More for me.  He did say he will have a little bit, but wanted mac and cheese too.  I'm not usually a cook something different for everyone, but I know Ant will have some mac as a side too.  It works.

The Jalapeno Popper Chicken is a new one.  It has made the menu many times but somehow always gets skipped.  But David picked it this week and I have everything for it, we will see how it goes Tuesday.  The other 2 recipes are solid favorites.  So I'm not worried about them at all.

Whats on your menu this week?

We have really slacked on our eating habits this summer.  Not that we ate to much but more that it wasn't set.  I would cook and the boys would graze.  David may have had one to many dinners alone.  I ate way off track of what I should and could eat and now its time to get everyone back into line.

There is only ONE week of Summer Break left!  Then back to the grind we go!  My goal for this week is better eating and sleeping!  Easy right?  We are about to find out.
