Last week was pretty much a bust. My Liver Clinic appointment was upsetting and I let that set the tone for the week. I am starting this week out with an MRI. Easy peasy and little room for disappointment. Unless the results comeback bad, but I am guessing that there are no changes there either. Fingers crossed. I have been having more pain in my abdomen and the Doc said she didn't feel a great amount of fluid. This will just give them a peek at whats going on in there.
My appetite is next to nothing so I let the boys decide what we are eating this week. I love that they make pretty balanced choices. Their only request was a different kind of taco this Tuesday. I always modify recipes a little to fit my restrictions. I almost never add salt and use ground turkey over beef. And The taco recipe for this week calls for the whole thing to be fried, but we will skip that! I have started eating more and more greens and have been adjusting my meds with that. So far that is working out ok. Thank God. I love me some greens. I just hate having to take such high doses of meds to be able to do that.
Here is what we have lined up for this week.
Tuesday: Shredded Beef Tacos
Wednesday: Leftovers
Thursday: Oven Fried Chicken, Alfredo and Broccoli
Friday: Sausage, Rice and Corn.
Can you believe its almost fall? Here in Texas it seems to go from Summer to Winter. I would love to live somewhere, someday, that has a real Fall. With cool temps and changing leaves. We are still in the upper 90s here.
What is your favorite fall dish?
