Menu Plan Monday: Feb 23

Oh Hello Monday!  You are back so soon! I know I am not the only one with a case of the Mondays.  I don't always hate the start of the week but the weekends are so much more enjoyable. Am I right?

Here is this weeks menu.

Monday:  Leftover Chicken with salads

Tuesday:  Spanish rice and steak.

Wednesday: Chicken Tettrazini with veggies and garlic bread

Thursday: Leftovers again.

Friday: Shrimp Scampi with linguine and salads

Saturday: Enchiladas, rice and beans.

Sunday:  Baked pork chops, roasted potatoes and broccoli

Trying to balance my diet to satisfy not only my doctors but my body has been a little tricky. When I started taking my blood thinners I had a hard time.  I was taking huge doses to get my INR up to a safe level.  The lower the higher the risk of throwing a clot.  I love my veggies.  But I had to do an elimination diet and see which foods were causing my INR to lower.  I ended having to cut out most veggies to be therapeutic.  I know some people will say that you should adjust your dose around your diet, but at 20mgs my hair started falling out and I was sick to my stomach all the time.  During last months lab work my IRN had jumped up so the good Doctor told me to have some salad and see how that shows on my next draw.  I have been loving having salads and more veggies for meals.  Lets just hope it doesn't crash my numbers!
