I hope everyone had a great winter break. Its back to school for us today. And I have an appointment with the liver clinic this morning. Bright and early. Joy. Back to the grind I guess. It was a nice, much needed break. We spent most of it at home sick. This past weekend was the first weekend in a long time that we didn't have a hundred errands to do. And with us both being sick, I didn't cook much last week. We just kinda threw things together, ate leftovers and went to the in laws for dinner. But I think I'm on the mend finally. And I need to get back to cooking, so here's what we are eating this week. Easy planning since I'm just carrying over a few dinners from last week.
Monday:
Teriyaki Salmon with Sriracha Cream Sauce. Served with brown rice and salad
Tuesday:
Chicken and Spinach BLTs with carrots and celery
Wednesday:
Steak Tacos
Thursday:
Chicken Parmesan with Spaghetti and Sauteed Broccoli Rabe
Friday:
Leftovers
Saturday:
TBD. We are planning a day getaway, so I'm not sure where or what we will be eating.
Sunday:
Roast Chicken, potatoes and salad
Bonus: If I manage to stick to my menu I will knock out my 3 new recipes for the month!
