Gigi's Chicken Teriyaki

Ok, it is time to get back to eating better.  Eating balanced meals on vacation was a total bust. And last week was nice because I was back in the kitchen, but dinners were still a little on the heavier side. That clam chowder though was worth it.  Even I had a bowl.


This week I am aiming for healthier and easier.  So there are lots of veggies and all the recipes are done in 30 minutes or less.  The Eggplant Stir Fry is a new recipe that I mean to make a few weeks ago but they were out of eggplant.  They had it this week and I'm excited to try it. I'm using chicken instead of steak so I can try some too.  Then if everyone likes it, I will make it with steak for them again later.

The Teriyaki does get marinated overnight, but I'm not counting that time.  But you guys, this is a Panda Express Copycat recipe that I LOVE.  Mostly because it's not full of salt, sugar and who knows what else they put it in.  Plus, is a Gigi Eats Celebrities special.  And that woman cracks me up.  I need to try a few more of her recipes. Maybe next week I will finally get around to trying her Chicken Shawarma that she is always talking about.  I'm not sold on Cinnamon on Chicken but how do I know if I don't try it right?
