Menu Plan Monday { January 15th }

Slowly but surely things are getting back to normal around here.  Although I'm sure that now that I have said that, something will come along and throw me for a spin.  The holidays are mess for me.  And Friday we celebrated Alex's 9th birthday!  I sat down to write about that but the words just wont come out of my head.  I think I'm still in shock that he is almost out of the single digits! There's no going back, only forward!

MONDAY Dinner at Grandmas

This weeks menu has my stomach growling already.  Since David and the boys are home today, Grandma invited us over for dinner.

I'm changing a few things around on this recipe and making Chicken Taco Quinoa Bowls.  We eat a lot of ground turkey and I just wanted to change it up a little.

I have made Salmon before.  Its super easy and doesn't take long to get it all thrown together and in the oven.  Just what we need to get us over the hump day.

Kung Pao Chicken is one of the boys newest favorites.  Mostly because its so full of spice and flavor.  I make myself a little pan of the not so hot version.  I just can't handle the heat!

Friday night is date night.  Not sure where or what we are doing, but I figured I could fill the boys up on Spaghetti before sending them off to Grandmas for the night.  They will probably eat again while they are there.  That's what Grandmas are for anyways, right?!
