Menu Plan: September 25th

Well then!  Monday got here a lot faster than I was hoping for.  One minute its Friday night and the next think you know Mondays is busting down the door. And as much as I want to just drop the boys off and go back to bed, there is just to much to do. I might as well make the most of it!
Things are going to get a little interesting around here this week.  I can't spill the beans just yet, but lets just say there will be one more mouth to feed for a little while.  Something tells me that this little surprise is going to keep me busy all week and that Friday will be here in the blink of an eye. I can't wait.

You know what else I'm excited about?  This weeks menu. There is a little big of everything on here. And not one, or two, but THREE new recipes to try this week.  Not sure what I was thinking when I did that but the shopping is done.  The menu is locked in!

Last weeks Pad Thai was good. But it made me crave Thai and my favorite dish that I always order, so we are starting the week off with Pad Woon Sen.  I am praying its even just a little close to what I get when we eat out.  I guess I will find out tonight.

Street Tacos because its Tuesday.  Wednesday I am making the Zucchini Enchiladas that I didn't make last week.  The zucchini at the store were looking pretty pathetic last week. This week there were much better!

Thursday morning I will get the chicken marinating for this Sweet Chili Chicken.  After all the thinking of Thai food, I guess this is what happens. I love sweet chili sauce. And they guys will be excited to have a break from chicken breasts. Yay for drumsticks!

And just like that it will be Friday.  The day where we pull out what ever is left in the fridge and finish off the leftovers.  Of course if there is any noodles left from Monday, I call dibs. I just love Fridays.

How do you feel about leftovers?  Yay or Nay?
