Menu Plan: August 14th

I hate to say it out loud but Im going to do it anyways. Im really excited for a new week.  Im excited to get back on track and get back to our school routines. Im excited to sweat and Im excited to go grocery shopping. Im probably jinxing myself, but its better than going into the week grumpy.

My menu done and I am super excited about it. Three new recipes again. They are all light and they all look amazing. True story, I pick my meals based on the picture probably 90% of the time. Im a visual kinda girl. Im also a procrastinator which is why we are grocery shopping tomorrow after the gym. Zero sleep last night, an angry liver and bad food choices made for a very rough Sunday. And a late afternoon catnap meant a late dinner. But nothing's gonna stop me from waking up and being thankful for a new week. Here is what's on the menu this week!


Tacos on a Monday? Yeah. Im a rebel, I know. But Tuesday and Thursdays are swim and Im trying to keep dinners super easy those days. Do these Turkey Taco Lettuce Wraps not look amazing?! 

And what about this Chicken and Asparagus Stir Fry. I will use aminos instead of soy to bring the sodium down.  Im debating on trying a fried rice from cauliflower. Might just make brown rice pilaf to keep the boys happy. They prefer cauli rice with saucy dishes, but I know it's not as filling for them. Growing Boys I tell you!

Plus Friday we are having Garlic Butter Shrimp and Cauliflower Rice. This is a sheet pan dinner. Which means easy to prepare and clean up. Hello! Perfect for a Friday!
