Menu Plan Monday: January 4th

First Monday of the new year and its shaping up to be a very good week. The menu is done. Well its been done for days, but we were just a little busy being lazy and keeping warm and dry around here this weekend, that we didn't go shopping. Thankfully my MIL is taking me after we do labs in a little bit.

So we have 2 new recipes and 3 tried and true meals. The boys have been full of suggestions and David even peeked over my shoulder as I was skimming Pinterest and told me that the chicken and veggies looks good. Even more shocking is that he suggested white rice with it.  The man hates rice. Maybe that is a strong word. He just got a little tired of it. You see, where I grew up, rice was a food group. Served at every meal. I kid you not, my mom will eat spaghetti sauce...over rice. So Ive always just made a pot with just about everything. If not white rice then brown or Spanish. He was riced out.

Who knew Parmesan and Salmon could taste so good!!??

So here is what we came up with.

Monday:  Spaghetti and salads

Tuesday:  Pork carnita tacos

Wednesday:  Parmesan crusted salmon

Thursday:  Balsamic chicken and veggies

Friday:  Monster meatloaf

I was planning on making brown rice with the salmon, but the boys asked for Alfredo. So at least there will only be rice with the chicken. Meatloaf calls for roasted potatoes. How is it, my kids like them, but do not eat fries? The tacos are the other new meal. But we are a little tacoed out too, so I'm trying to find more variety there. And to day is National Spaghetti Day. Who knew there was such a thing?

We also decided that I need to stop cooking like I am feeding an army. Its a habit I have come to love and hate. Leftovers are always nice, but when we can eat them for 2 days...I probably should tone it down a bit. I make big batches of chili and cook the huge packages of chicken. And even though we eat leftovers, we still throw some away. Such a waste. So this week I am buying smaller packs and not doubling anything.

I hope everyone had a great New Years and that y'all are ready to get back to the grind today. I am off to the hospital for labs that I have been avoiding and then to the store to stock up the house. Then hopefully I will have some time to breath before the boys get home and we settle back in to routine. The first week back is always so hard.
