The day is finally here. Its the first day of school and its already over. I'm not gonna lie, after David left for work, I went back to bed! This mom didn't sleep well last night. And I decided that today was the best day to start my lactulose again. How can something that is supposed to help, make me feel so horrible. I'm drained. Pun intended. Like to the point that even my eyes feel dry!
But lets talk food. The first week back to school can be a tough one. So we are keeping the menu familiar and easy. This makes life easier for everyone. I don't have to worry about them not liking a new recipe and it doesn't throw them off too. There isn't much they wouldn't like, but still. After school comes homework and chores. The routine is different and the less time spent in the kitchen, the more time I can spend with them adjusting to the new order of things. Makes for less stress and tears! And that is a life saver. So...

Notice all the salad? So here's the thing. Back home, we eat rice. With EVERY meal. I grew up that way. And for the longest time, I too made rice with almost every meal. We are a little riced out. The only bad thing is that the greens throw off my coumadin. And being on a high dose already means I will have to go higher. Last time I took this much, my hair fell out. No joke. But I love my veggies and I am tired of the boys looking at me like I'm crazy for piling salad on their plate and then none on mine. I for one am really looking forward to it! I am making white rice tonight but that's it. I've really been craving me some mushroom chicken. David I think might not be as excited but hopefully he will live. I think.
