Menu Plan Monday: June 29th

After an amazing but exhausting weekend, I am looking forward to spending some time in my kitchen.  Cleaning it mostly, but cooking too.  So here is another quick and easy menu.

Monday:  One Pan Salmon & Veggies.  I love this meal for nights when I am running behind and need to get something in the over quickly.  And it helps that we usually always have everything we need for this meal because I didn't make it last week.

Tuesday:  Tacos of course.  Nothing special this week.  Just simple ground beef tacos.  I have used the flavor packets before but because of the salt in them, I started just adding a little cumin and adobo seasoning to the meat and that works for us.  Tacos also work as a great red meat option because I put more veggies than meat in mine.  Red meat and my liver are not friends, but turkey tacos just aren't the same!

Wednesday:  Sriracha Teriyaki Meatballs.  This is a recipe I have been wanting to try.  No better time like today right.  Well Wednesday anyways.  Served over brown rice and maybe with some broccoli.  Can't wait to try it.

Thursday:  Leftovers or Chicken Tetrazinni with salads.  This is one of my fall back recipes. Something I have everything to make usually on hand at all times.

Friday: Clam Chowder and homemade bread bowls.  I'm still searching for the bread bowl recipe so if anyone has a good one, let me know!

So there you have it.  Like always, easy and fairly quick meals.  Have an amazing week y'all!

    1. If we were neighbors the world wouldn't know what hit it! LOL I should probably take notes from yall! We have far to many cheat meals here ;-)
