Menu Plan Monday: Sept 2nd

Well I finally got tired of cooking the same old things and so I am trying out two new recipes this week.  Daring I know.  I don't know when I lost my my love for cooking.  Probably right about the time I lost my appetite.  Its hard to make food when nothing sounds good.  But we will see if these new recipes are keepers or not.

On another note.  I have been trying to reintroduce vitamin K (aka: every freaking vegetable that I love) back into my diet.  In the beginning of my illness I was told to cut out all of it because I could not get my levels to where they needed to be.  But what can I say, I was raised to love my veggies and a life without spinach and lettuce and okra, is boring.  The only thing is I will have to keep the amount of vitamin K I eat each day the same so that I can change my meds to the right dose with them.  So this week its a salad a day.  And next week we will see how much it throws off my meds and adjust them.  Such a pain in the butt, but its much better than a blood clot!  Any day!  Here is what will be cooking up this week.

Monday:  Soccer Practice tonight.  It was fend for yourself night :)

Tuesday:  My house is a mess, so Tuesday will be spent getting everything back where it belongs.  Cleaning, Laundry, Organizing, blah!  So I'm busting out the crock pot and trying something new.  Crock pot Ranch Porkchops.  They look good, but will they taste good?  If they are good I will have to find a way to cut out the crazy amount of sodium in them.  I guess we will see tomorrow.  I haven't decided on mashed or roasted potatoes as a side yet.  And salad.

Wednesday:  Soccer Practice.  PW Sloppy Joes.  I will admit the first time I had Manwich I thought it was amazing.  Dad would NEVER make us this because it was out of a can! Seriously.  Actually, I don't know if he even ever made us sloppy joes before.  Anyways.  When I was put on a low sodium diet, sloppy joes were something I was craving but have you looked at the salt in a can of that stuff?  It was off the list. Pioneer Woman to the rescue!  I took her recipe, switched out the beef for turkey because I am not supposed to eat beef either. Then I just used the no sodium tomato paste and ketchup.  And no ever noticed the difference.  I usually serve fries or chips with this.  Keep it simple and easy ya know.  But the boys agree, this goes best with a big salad.

Thursday: Steak Tacos.  I guess Mr. Mexican is finally tired of the usual ground beef tacos and he has asked for it so steak it is.  Nice and easy.  All I have to do is decide if I want to fire up the grill to cook the meat or not.  I guess that depends on how hot it is when I start making dinner.

Friday:  Another new recipe.  And another PW one at that.  Doesn't this Baked Ziti looks amazing.  And I have loved all of the recipes I have tried of hers so far, so hopefully this one will be the same.  I was a little thrown off at the fact that there is no provolone in the recipe, but I always make a dish by the recipe the first time.  So fingers crossed it tastes as good as it looks!

Not sure what we have planned for the weekend, but then again, I never plan for the weekend unless we are having a BBQ or something.  Usually we just clean out the fridge of all its leftovers so I can start fresh next Monday!
